Make homemade mac and cheese without milk
I will say my go to Mac n Cheese is cooked elbow macaroni and after I drain it it goes into a microwaveable bowl. I add whole milk, margarine, salt and pepper to taste and cut up blocks of Velveeta cheese. I start off on high for a couple of minutes and stir and keep heating for a few and stirring until it is all melted and covering the macaroni well and taste.

Strain pasta, leaving the pasta in the strainer and returning the saucepan to burner over medium-low heat. Combine milk, butter, salt, pepper and paprika and mustard in the saucepan. Stir frequently until butter is melted and increase heat to medium-high. Once mixture comes to a simmer, return pasta to saucepan and stir well. Add cheeses, allow to sit about 30 seconds until slightly melty and then stir until all noodles are coated. Serve immediately. Sprinkle with additional smoked paprika, if desired. Stir in any desired add-ins such as bacon immediately before serving.

Yes, I know some people do not consider American cheese real cheese , but some of those same people will not hesitate to put those rubbery looking blocks of other processed cheese into their macaroni and cheese or their queso dip for that matter. Sometimes, when I find some orphaned partial bag of cheddar shreds in the fridge I might add a bit, but not too much. Cheddar really needs a low heat to melt properly. The cheese will break if heated too much and may become gritty if melted too fast. The simple no roux, no flour, macaroni and cheese recipe can be baked. To bake this, simply place it into a greased casserole dish and top it with a crushed cracker topping.
To make a cracker crumb topping combine 1 cup of cracker crumbs with 4 tablespoons of melted butter. Bake it in a Degree F oven until the cracker crumbs are golden brown. Serve immediately.
